So I have a few extra project cores after unlocking what I needed. Are they going to be disenchantable after the Project event is over?

yeah from the Project: Disruption FAQ:

What happens to my Blueprints and Cores when the event is over?

All PROJECT content will stay in your Hextech Crafting inventory once the event is over. If you prefer a tidy inventory, you'll be able to disenchant all PROJECT materials into a little bit of essence.
