You use "much" for non-discrete things. For example, I can say "There is too much sunlight!" but I can't say "There is too many sunlight!" because sunlight isn't discrete; it can't be separated into entities. Mistakes are discrete because they can be separated, so they use "many" as opposed to much. Many = discrete, much = non-discrete) mistakes. (Overall, your first sentence is quite grammatically solid, just try to remember to capitalize your personal pronouns and remember how to correctly use "many" and "much".) I want to convey my deepest condolences to the families of the victims (I completely restructured this sentence, because your use of "It's" is somewhat ambiguous and you want to convey your condolences, so that's why it's good to use I. I put "deepest condolences" before "families of the victims" because that it is an essential part of your sentence (the object) and it distracts the reader to read the prepositional phrase "to the families of the victims" and then read the object and piece the two things together. It flows slightly better, but this is a stylistic thing and not extremely important.
