Jhin isn't obsessed with death itself. He's obsessed with the whole murdering aspect of it. He could care less about the entity of Death, he just wants to end people in artistic and "beautiful" ways.
But you missed my point. He doesn't actually care about the entity of death. In an artistic analogy, death is only the canvas on which he creates his art. A painter doesn't really regard the canvas as much more than an object in which to paint. Jhin's art is to create a spectacular, artistic death. His art is in the murder, the corpse being the piece he leaves for all to see. Death is only a mechanism to achieve that goal.
Probably has to do with her not being perfect. Ideas vs reality on a fictional universe. Who knows.
