Profile background
Sometimes it will show my highest mastery champion 
, and sometimes it shows my top played champion in 20 games. Can i change it? How? I would want to know. Thanks.

Unfortunately, right now we can't control it. It just picks between those two (highest mastery/recently played) like you said.
Being able to pick who and what skin are our background profile: this feature has been asked so much about, I'm not sure what riot is thinking by not implementing it, it's not like it's a hard thing to do.
