So I'm writing a paper on the evolution of league, and I was wondering if I could get some help from the community? The topic ranges from champions to items to map updates to anything. Thank!

Well you could follow with the metas that formed. Season 3 was an assassin meta, with Kassadin being pick or ban. Then season 4 brought about some changes to the support role and made them more viable with Thresh being touted as overloaded and in need of nerfs (still is overpowered) where we got trinkets for free warding and a change up of the jungle item setups. Season 5 had the creation of juggernauts and the tank meta. Season 6 saw some changes to the ADC role but I think health regen champions are what is going to reign supreme this year. I don't know anything about season 2 and prior as I was not a part of it.
As a company Riot is progressing from a fun and involved company into an arrogant "we know better than you" company who no longer takes community opinions into consideration with any changes they make to their game.
If you want to talk about the community as a whole you can sum it up as "They get more toxic with each passing day."
What, more specifically? "League" is a very big topic; do you have anything in particular that you're interested in?

maybe go across what riot focuses on accomplishing and what they want the game to be across the seasons
It is too big topic but if you want to write general things I think you can write about game modes as well. From URF mode to Xexakill and so on. And one of the biggest development in League for me personally is Team-builder in S5 and S6.
