Gold and green are command (at least Captain Kirk wears both, though Chekov and Sulu wear gold as well), blue is Science/Medical, and red is Engineering/Security/Communications (because Chief Engineer Scott and Communications Officer Uhura wear red as well, maybe just to confuse things). Since the red shirts are Security and they are brought to dangerous places (and you can't have the main characters die), they tend to die a lot to show how "serious" and "dire" the circumstances are.

To further Iterate: In later Star Trek Series this was changed, Red being Command, Gold being Security/Engineering/Comminications, and Blue remained Medical
