From what I've read, the "y" is supposed to be the translated differentiation between "Kiseijuu" and "Kiseichu".

"juu" apparently means "beast" or "animal" or something like that, while "chu" is something small like a bug, I think. Both "Kiseichu" and "Kiseijuu" mean "parasite", but their association is different. Apparently "Kiseijuu" is only used once in the anime, and it's used to refer to humans.

"Kiseijuu" or "Parasyte" refers to humans, who are parasites to the Earth. "Kiseichu" or "Parasite" refers to the actual parasites.

There was probably a lot of debate as to how to translate it when the manga first came to the West, and they just stuck with it when the anime was made.

I think. I don't speak Japanese, so I'm just going off what I've read about it.
