AP Tryn was a nightmare to lane against. Full heals and instant wave clear, but no teamfight whatsoever. He wasn't good, but he could push lanes and take towers like a monster. Since he forced one person to babysit whatever lane he was in, he just made that one person as useless as he was.
AP Yi was even worse, since he actually could teamfight with those Q resets and total invulnerability while Meditating.
AP Gangplank was just trolly. Basically get a kill on a single squishy every time your ult was up with a little team coordination.
AP Warwick was sort of viable. Nashor's made his ult hit like a truck, and Hungering Strike was a 100% AP nuke + 80% AP self heal on a short cooldown. You still see them in ARAM all the time.
AP/Pen Mundo is still totally a thing. 40% current-health-damage Cleavers for days. (after Liandry's)
AP Ezreal hurts like a truck past the 20 minute mark, but has a terrible time getting there. I still try to pull him out every so often.
AP Garen was just absolutely friggin hilarious, but disappeared with the removal of DFG.
AP Xin Zhao is still a thing on occasion. So much heals, and Nashor's + natural AS steroid meant massive sustained damage.
AP Kog has made a comback with the introduction of Luden's Echo. Plays like Azir: pretty massive burst potential + stupid damage on AA's. Makes up for the safety of the shield+dash and ult wall with siege potential.
AP Miss Fortune is exactly like playing a mage. Drop some AOE's and run away.
I saw someone try a glass cannon AP Rek'Sai. The 100% AP ratio on the burrowed shot was funny, but just kind of pathetic as the game went on. I was playing normal bruiser Rek'Sai that game, and was actually capable of doing things in teamfights.
AP Rengar was ungodly amounts of stupid. AOE instant death on a 10 second cooldown. This was back before the ult rework, so every time it was up, you could stealth to an enemy, then double shout and delete them.
AP Tryst was viable with the right teamcomp. Past the 25-30 minute mark, her jump+ult just absolutely deleted one person, then the resets started.
AP Varus is still a thing, and makes a wonderful mage. Try it out sometime.
That's all the ones I actually remember being a thing. Some were hilarious, some were game breaking. You can theory craft more of them, but these are the ones I have personal experience with.

Just because his E is like the only ability that scales with AP doesn't mean AP Yasuo isn't viable.

is my mid lane mage of choice right now. 121 games played as AP Ezreal to date, averaging a 53% win rate over all of them.
I suppose Riot does label him as a secondary Mage though, so it's not the most out there build.

Everyone always forgets the ap hecarim.. 100% ap ratio on ulti + 20% Ap ratio per second with W.
I tried AP Trynd a bit ago. Sadly enough, it didn't work... .
But! I'll be trying a new build based on the Devourer Enchantment and Wit's End to do magic damage with autoattacks that scale up as the game goes on! The attack speed from those two items alone is ridiculous, so I'm hoping to leverage that to charge up his abilities quickly and be able to build a little tanky on the side.
