I main Diana I noticed that when fighting Azir in the mid lane, my orbs do NOT detonate when they hit Azir's sand soldiers. I don't know if this is intentional or not but if I remember correctly I can hit them with my other abilities.

It is intentional. You can not target them at all, and they are completely immune to any damage, including that from turrets. As stated earlier, it is just like Oriana's ball.
I'm pretty sure you've confused the soldiers disappearing and minions near them being hit, with them being hit. They are untargetable and have no collision.
