I think it would be cool if you could see all champs currently in queue, so you could hand pick a champ for every role

Then you'd simply have champions appearing and disappearing like crazy.
This is very under developed. The point of Team Builder is to simply find someone who fits the role. Not necessarily your team. That is why you have an hour to say 'yes' and 'no' to whoever shows as well as the ability to invite friends.
