More asian champs? Every single Ionian champ is asian. Also maybe they just aren't in a part of the world that has a lot of colored races? Just like in the real world, there is plenty of places that are majority white, or majority chinese with very little to no other races around. Same could be applied here, I mean at the end of the day there is only a handful of places. Ionia, Frejord, Demacia, Noxus, Piltover, Zaun and Bandle City is basically all the places in the League world.
If anything I would be asking for more races or things that aren't human. More beast or spirit champions.

I think it's safe to say there are three women of colors with dark complexion in this game:
Sure, Nidalee was debatable for a long time due to, maybe, two of her skins having lighter complexion (headhunter and snow bunny) but I'll base my judgement to her default model as that's canon.
Illaoi is Pacific Islander, and Karma is definitely a woman of color - but it's not exactly clear what ethnicity she's based on by looks alone, so I'd be hard pressed to call her a black woman. You've also forgotten , who is clearly based on Middle Eastern women.
Nidalee is a white woman, there's no bones about that. She's based on Tarzan, and her whole story was is an homage to that, and there's not a lot of indication in any of her splashes that she's got anything but white or slightly sun-tanned skin. I do agree that there needs to be more diversity in this aspect in League. I do agree with Tahliyah being one of them, I forgot about her.

At current, with her splash overhauls, Snow Bunny, Leopard, French Maid, Bewitching, Headhunter, Warring Kingdoms, and Challenger are all distinctly white. Pharoah is very Middle Eastern in skin tone, and her base skin looks like a white girl with a tan (as a white girl would, being outdoors all her life). It's a very hard argument to call her a woman of color at this point.

That's exactly Nidalee's tone, while she's not black, she's also not white, if anything she has aborigine skin tone and she's pretty much the representation of hispanics/latinos in league of legends because of her ambiguity when it comes to skin color
ah and btw, the same discussion you're having happens with pretty much every latino throughout our lives :P

Your skin tone may not, but for a Caucasian, this isn't the case. Skin color is produced by pigments called melanin, which acts a biological sunblock. When exposed to the sun, the skin will increase the quantity of melanin due to UV exposure, and thus, skin tones will darken with consistent sun exposure. People such as Latinos or Africans, who come from regions where evolution has caused humans to adapt to high exposure to sunlight by having naturally darker skin tones, will generally take much much longer to darken in skin tone because melanin is already present by default. This is why it takes you longer to tan. Caucasians, on the other hand, don't have melanin present by default, and so their bodies will increase melanin output at a higher rate with more prolonged exposure to UV radiation. This is why white people tan faster. Nidalee, by comparison, tends to have a much lighter skin tone in the majority of her skins, and even those where her skin is darker, it is not particularly consistent with Latino skin tones - it's lighter in many cases and marginally darker than Caucasian skin. This is why it's very difficult to argue that Nidalee is a woman of color.
