I personally think that it was Eduard Santangelo, the Piltovian gentleman who discovered the Vastaya and made tons of extremely detailed logs and data on them, along with an extreme fascination and obsession with Ahri. He was also quite the artist, having drawn very artistically-detailed drawings of the flora and fauna of Ionia (particularly, flowers in some cases), as well as a portrait of Ahri bathing in the lake. Last we heard of him, he was taken by a group called the Navori Brotherhood, which we still have no info on, and haven't heard from him since. I personally like to think that the letter he wrote back to Piltover about being taken as prisoner by the brotherhood was false, or he was saved by Ahri as they fell in love, eventually leading to his death by her hands.
Another popular theory is that it was
who was the artist who'd Ahri fell in love with, having only had his mind and life-force taken to near death causing him to go insane, as he also didn't mind Ahri's killings and saw them as "beautiful". However, this was debunked due to the fact that Jhin was in prison during all the events that Ahri had apparently been eating people (mentions of memories of the Noxian invasion, which Jhin was in prison for the entirety of).
