I think this question is more multi-faceted than most people may think, and people will like different answers based on their personality.
No matter what, the person is going to die, and Kindred asks how the person would like the die.
Lamb's arrow would be the option for those who have done everything they have ever wanted in their life, and just want to die peacefully. Wolf's chase would be for those adventurous people who want one last thrill before they die.
I personally would prefer Lamb's arrow, since I just want to die peacefully when I die.
Well with Lamb's arrow, you have less chance to escape but a more quicker death. Wolf you have a higher chance to escape sure, but you aren't dying quick, he will bite you and shred you so you are going to be in pure agony as you slowly spray blood all over. I would take the arrow anyday, if you manage to have something to cover yourself from the arrows, you may escape but at least Lamb doesn't savor you suffering, she seems more likely to strike you then put you down so you don't have to suffer vs Wolf which would love to see you bleed and run for your life and suffer as you slowly die.
Well, it's much worse if you die, and you probably will, but with Wolf's chase at least you get to go down fighting.

I don't think I could just give in to death. I think Wolf would offer a bit of closure that Lamb can't, that at least I could say I tried.
So basically it's either die in the more peacefully manner (Lamb's Arrow), or the more grotesquely manner (Wolf's Chase). I swear it's like one of those light side/dark side SWTOR options... expect you're the one that's getting the punishment.
Ehhh.. I'll take the Lamb's Arrow just because I wouldn't maul my own enemies.
I chose wolf, better chance of surviving something that has to get in your face, that something that can kill you without being anywhere near you
Lamb's arrow is intended for those who have accepted death as a natural, inevitable process - that is why death comes swiftly. Wolf's chase, however, is for one who denies death, and that is why Wolf's victims suffer a painful end - he tears the life out of them by force since they do not go willingly.
That being said, I myself would prefer Lamb's arrow. There is a certain feeling of serenity in accepting death as something natural.

Depends. If I were just a normal human I'd probably choose the arrow. Not much reason to try and run from the inevitable.
If I were a powerful being or enhanced human like Sion, Urgot, Xerath, Viktor, Azir, Taric etc, I'd rather stand my ground and fight. Remember that it is not in death which eternal lies, and there are no stranger eons than the ones that Runeterra is going through.
