It doesn't seem as if there is an easy way for a new players to get into lore

The only thing I see that is accessible is the lore in the client, but the lore in the client is just little tidbits of the lore. Look at Pantheon's lore for example in the client it is outdated even though with the new MT. Targon lore it was updated. After a couple of months that new lore about Pantheon, Leona and Diana will not be very accessible to new players. Another example is the lore from the Bilgewater event. There is also no way to tell what Riot deems canon or not canon. We just have to generally guess what old lore is still true and what old lore isn't.

Personally, I think there should be some Riot made League website that is all canon and this website should be easy to find for new players that are interested by in depth lore and back stories about their characters. I think it should be something like the 'LoLEsports' website but for lore and riot should have a button the the top of the League of Legends website for it (like Game Info, News, Esports, Boards, College, Merchandise, Support, Lore (Or something else)). Maybe Riot could also incorporate it into the new client somehow

TL;DR: I love the lore Riot has currently been making and I just want it to be accessible to players in the future.

I also want to know what lore is canon. Maybe Riot could make a League of Legends website dedicated to lore.

If a Rioter that knows about this could respond and tell us the current situation about this that'd be amazing, thanks!

Agreed. I know they're working on it, but we really need a better way to access lore.

Links to champion bios from the client would be a start.

Would be even better if they brought back a 'lore' button, where you can read about the different places and the past events. Doesn't need the Journal of Justice, just places where people can find and read about Bilgewater, Shurima, the Freljord, etc.
