I wrote a post posing the same question but didn't get a Riot response, take an upvote so hopefully we get an answer.
A tl;dr on my thoughts is that even though monsters don't sell as well, the fact we haven't got one since Aurelion (or Rek'sai if you want a more monstrous monster) is pretty depressing and Riot should release one for old times sake, it's been 4 years. Unfortunately, Yuumi is likely to be the non- humanoid. I actually really like Yuumi's design but I really like monster champs so hopefully we get one soon.
The assassin sounds like they may be humanoid. Not necessarily a Vastaya, but some different race, maybe one of general forest folk like fairies or something like that. We know from the teaser that Piltover is cutting down trees for whatever reason, presumably in the eastern jungles of Shurima. Those jungles are home to many curious things, humanoid and not. Its likely they could be either humanoid or not, but I don't find it likely they'd release 2 non-humanoid champions in a row.
The marksman is a bit tricky because all we have is a short gif that doesn't really give us much information. All it appears to show is a clue as to where they are from(the background) and possibly an ability of their's. I think its a bit too early to say what they are just yet.
If not another non-humanoid this year, we'll likely see one next year. After all, champions take months to develop, and they release them on a schedule. If there is another non-humanoid in development, I'd say that, at the moment, this is most likely the case for them. We'll see, though.
