Why can't he be old (I assume you mean "old-looking"? Since Ryze is ancient as hell having lived for a very long time) if he's strong?

Not to mention, he's not even old-looking. He just has a huge beard.

Because the magic prevenets him from getting old. His beard isn't even a bit white for example. And he does a lot if fighting and travelling, of course he would be fit.
