I would've imagined that vastaya, considering they are part human, can still breed with humans and produce viable offspring. Also helps explain where vastayan-heritage shapeahifters come from.
Nothing says that Ahri can't have such relationships with humans; only that she probably doesn't want to after what happened with her previous lover.
The only real romantic relationship that is possible for Ahri is with Illaoi.

Just my personal view over Ahri's situation.
Regarding the homophobia issue: I don't usually care about the sexuality of ships as long as they make sense. Wukong and Sona are both viable ships, but I would like to have some of my own opinions here. Wuk is not so ideal as to the differences in their personalities, and as a matter of fact I don't think any male character should be shipped with Ahri. We all know from the lore that Ahri's primary target in the past we're men, as they are most likely to be attracted purely by her sexy looks. It very hard to show true love with that case. However, I think sona can be relatively more helpful for Ahri to solve her issue with trying to be a human being. To me an adequate partner for Ahri is a woman of any race, that possesses fairly powerful magic presumably strong than ahri herself, and is possible to have a connection with Ionia and thus Ahri.
