Wukong has no known canon relationship with Ahri, he doesn't even get mentioned in all of the short stories of Ahri. He literally just showed up in the "related" box for almost no reason and does nothing to contribute to that supposed relationship. He is pretty much only put in there as a nod to the fan series LaLaDemacia that comically paired them as a couple a while back. Canonically speaking, the 2 simply may not even know each other even existing.
And even if they are indeed officially confirmed to be a couple or maybe in the process to be, how even does that mean she's suddenly a chinese fix spirit and not a korean one? But, fox spirits are all the same hurr hurr amiright? Now think this, let's assume in League there is a character based off the imagery of a Titan (Ancient Greek mytho giants) and is married to another character who is a berserker (a type of warrior from Norse legends and loosely history, like Olaf, or Trynd who is also quite similar. We can even pretend this character is in fact Olaf), would you for some reason consider this Titan character a Jotunn (Norse mytho giants) just because they're married to a berserker? No, you won't, same stuff here.

Also, chinese fox spirit is not "Daji". "Daji" was the name of a Chinese Emperor's consort who existed in history (roughly 1000BC) that was both as insane as she was manipulative, and basically singlehandedly drove a dynasty into the ground and so was later associated to being a fox spirit.
