Same reason Sylas has a P90X body from a diet of rats while shackled up for several years.
It's a mainstream game, it appeals to a mainstream audience. That will NEVER change.
She's a ghost that created her own body.
She can do what she wants.
How did she do a lot of things... cause you know she didn't have a body, it was her soul trapped in there.
Cause teasers/splash arts show the champion as they are in the present day in the lore, not how they looked in the moment, cause otherwise its false advertising.
I swear I read somewhere that Lucian buried her. Must have been retconned.
