I'm the sort of person that loves to learn the really pointless, domestic facts about a champion, so I'd love to think what are some things you could see champions keeping as embarrassing little secrets.

Though I wouldn't say they are "little secrets", they are pretty embarrassing ones for Xerath. Things we likely would never hear directly from his mouth.
First, Xerath still cares about Azir.
Not in way of social standards of course, and possibly not a strong one, but in deep of Xerath's soul and mind, Azir is still his childhood friend and the person he loved the most for his entire human life. This truth he would never admit might come into surface to our readers in their darkest moment with his actions though. Tsundere Xerath when?
Second, he is shattered and insane.
He became one of the gods of Shurima, he achieved his past goals. He gained a power at his command that is incredible... But he couldn't endure lost of his family, his slavery, imaginary betrayal of Azir and the most important one, 3000 years of imprisonment in a dark and limited tomb. He is lost. His life was so tough he couldn't stand anymore (with that lost of course he made them pay everything but that's another story). It is a truth he probably can't accept, maybe he is not even aware of it.
He is so lost actually (even while I think he regrets things he had done) he believes nothing he would do would redeem himself. But at the same time, he wants to believe what he does is justified as he is an analytic person, he is all about reasons. Without reasons, he wouldn't take actions. But even imaginary and weak reasons can trigger the pull. Xerath created his reasons.
When you think about he is just a really complex character.
