So I have a question for you players of the Dunk-Master.
My Build: Ravenous Hydra Spirit Visage and/or Sunfire Cape Randuins Omen Mercury Treads Guardian Angel/Trinity Force Black Cleaver
My question is whether or not Black Cleaver is a viable or useful item because of the passive armor pen granted from Darius E, and whether or not I should go for more tank, or should there be another item for even more damage?

Pretty good. I would make a few changes though. If you are doing well, you can still go Sunfire second. However, if not, I would go Randuin's. Next, I think Mercs a little earlier is good because Darius has no mobility. Trinity is probably a bad idea. If you want more damage, instead of Trinity you can buy Maw or Black Cleaver as you said. You can go GA, but there are better things to buy. If you want more defense, Frozen Mallet is a good mix of stickiness, tankiness, and damage. Banshee's is a good item for more MR.
If you really want more damage, as in you are really ahead and can build damage without dying, I like to build Bloodthirster.
