I was playing an ascension game and when it had finished we were looking at the graph and it said I had over 500,000 damage, which i'm pretty sure isn't possible.

The numbers are inflated due to his Omen of Death. It does a lot of damage to itself and that is recorded under damage to champions. Yorick isn't actually doing this damage to other players.
It's not just Ascension, I've had the same thing happen in ARAM, I think it happens when 
is in the game but it doesn't always affect his stats.
