Basically I did two arams after choosing the paths for act two, when I looked after doing 6/10, it said I was still 0/10, when I relogged, it gave me the option to re-change the paths for it? After chosing the same path, it locked, but didn't keep the 6/10

If so, you have to complete the first goal before you can start working on the second goal, so you need to reaching the number of minion kills you need before you can start working on your ARAM wins.
