We Have Restored This Version to a Previous Version.... to Greyed out Play Button

I've uninstalled and reinstalled League of Legends 5 times and every time, I get a message saying, "restored this installation to an older version of league of legends..." and then when I log in, there is just a greyed out play button and I can't join a game.

Try doing a client repair while running as an admin, and you can use the Hextech Repair Tool for that. If that doesn't work for you, please post on the Help & Support board and the Rioters there will do what they can to assist you.
