Not to mention the only reason they made Demon Vi is because Roman Numerals states that VI is the number 6.

On a 2nd notice, VI is the roman numeral for 6; Because VI is written down 3 times, one can also interpet it as 666; which is apparently a symbol of the devil.

Actually 666 does not represent the Devil. Back in Roman times, Nero Caesar was Emperor of Rome. He set Rome on fire, and in order for the citizens of Rome to not think it was him, he blamed Christians. The Christians were mostly killed although some recanted and forgot Christianity to save themselves. Anyways, in the language spoke back then, letters also corresponded to numbers. Nero Caesar's name corresponds with 666. That is where the number comes from. So really the Devil has nothing to do with it, it was just a way Christians identified Nero Caesar.

Yeah, it is because that's Vi is her code (that and 666 for demon). Just like Jinx is actually IX. They were part of some project or something. That's what I was told by some Riot story people way back in the day. No clue if it has changed since they always throw things around.
