Sion: AD, Tank, or AP?
What should I build for Sion top? I typically go for a Tank, and it works very well, but I hear some people making him AD or AP? Wat do?

I recommend just going pure tank. It is hands down the best way to play him.
I think you should experiment yourself. His passive hp gain allows him to be tankier than someone with his same build so you can have a fighter with higher sustain, a tankier tank or tankier AP. I don't really understand going AP, though, because he scales with AP pretty poorly and only two of his skills benefit from it (i.e. he has low sustained and burst damage building AP).
I feel like Sion needs a lifesteal item or else a very good managing of his shield, otherwise he can get chipped out of lane by his opponent.

Six tank items is fine, but it's perfectly possible to build some AD on him (I don't know why you'd bother building much AP though, tbh).
Ravenous Hydra is very good on him.
