I want to find a champion that I can main and over time become very good at, I'm looking for a champion that has a very high skill cap that can basically carry games if played correctly.
I've been searching for a while, any ideas?

Not hard to play, but fun cause u cant die unless you are 1v5 under turret and havent e'd away within 10 seconds
I saw that you wanted champions for mid and top Top: Gnar and Riven Mid: Heimerdinger
Azir is (arguably) the hardest champion to play in League. He's free this week which is great too. I've played him once in a custom and he was pretty fun but took a while to get used to. Playing with Azir requires you to be able to really keep track of multiple soldiers at once, and his ult is kinda hard to utilize effectively (ex: pushing them under your turret, etc)
Zed can be hard, depending on your strengths or weaknesses. Similarly to Azir, you have to always keep track of when you have your shadow and where it is, so you don't end up switching places with it right into your enemy.
Viktor is kind of iffy, his laser is sorta hard to get used to, especially when you need to make quick combos, etc. He can easily snowball and does a lot of damage, once at least two of his abilities get upgraded.
Can be played in top lane. He's seemingly easy, but not really. You really need to know how to land those Q's to be able to do much, and try not to ult the enemies away from your team and into safety.
I'd suggest 
Shen for top lane. He's a very solid pick that can rarely be killed if built effectively. He has a skill cap because you need to know when to use the ult to turn around a fight. You need map awareness and awareness of the enemy team as well.
Top: 
, skill cap pretty high, can be hard to land Q, but once you play him correctly, he can carry and get fed like crazy.
Mid: 
very high skill cap, great defensive power as he can turn ganks into double kills, also extremely annoying champ that can piss off the enemy team lol
