Some quotes aren't cannon, just a presentation if what a character would say to another character. For this quote tho I think she's talking about doing jobs outside of her house as secondary objectives which she dislikes by saying this: "Saving innocents is so time consuming".
She also has a quote "I am employed when negotiations fail." so I assume working as her clans intelligencer has some wage attached to it, even though she's basically running the clan.
Just because its a personal goal does not mean she cant get paid by them.
She needs her funding from somewhere to keep doing what shes doing, and they are likely glad to help finance her.
Probably either her Clan or the Piltovan Government.

I'm not entirely convinced Camille's VO 100% lines up with her bio and stories. This could be a case where Riot had her VO with the assumption that she was a high end assassin in Piltover, but when the lore team got ahold of her, they made her into a clandestine protector of her family's properties.
"They" are the pilty bourgeoisie that surpress the working class and destabilize the lower class of zaun, camille is just an enforcer of the status quo, a scissor legged thug for hire for the wealthy
