Sejuani's old selection quote
"Winter is coming" was way, way cooler than her new quote. Why the change?

Most likely GoT? Not sure.
According to the wikia, the "winter is coming" selection quote was an intentional reference to 'A Song of Ice and Fire.' (commonly, GoT)
I believe they changed the line to "I will not hide behind another's shield." simply to show how she intends to stand on her own, defend herself and her people. She is a tanky, AP bruiser so it makes sense that she does not want to be defended by someone else when it is her job to do the defending.
