Is/was there any lore behind the in-game shop-keeper on Summoner's Rift?
The furry looking shopkeeper and the big Yak or whatever. What's up with them?

Nah, none of the shop-keeps in any of the gamemodes have lore about them. Maybe someday one of the alt-universes for skins will reference them but the likelihood is none are a part of the prime canon.
They're just a cosmetic feature, the rabbit hole doesnt "official" go any deeper.
