Caitlyn and Vi has never been hinted to be canon, it's just popular fanon. Of course, that doesn't exactly restrict you from enjoying artwork of it. Just a terminology correction.
I believe Swain and LeBlanc used to be this too, but Swain's new lines in his rework hint it's not...of course, political tensions are quite high in Noxus so it's probably more of a "complicated" scenario for those two.
EDIT: Oh yeah, and Lulu and Veigar is pretty much just fanon too. Although, then again, we got little to no modern Bandle City lore with the Yuumi update, so we don't even have concrete lore on the pretty confirmed canon Rumble-Tristana-Teemo love triangle, let alone any other possible pairs.

As far as I know Garen and Katarina aren't a couple canonically. Other characters keep teasing it in VO but they haven't even met in the lore.
Xayah + Rakan, and Kai + Valmar are good couples too with lots of art of them.
Pretty cool, but you know: Vi + Cait, Lulu + Veig and Swain + LB are all just fanmade fantasies and not real couples xD
