Volibear is a demigod now,but the ursine are his followers now and they are essentially a group of berserkers that used magic to partially transform into bears themselves.
Minotaurs were also confirmed to still exist and they are not related to the vastaya,I think Jayce even fought one in his lore(though going by the descriptions it could have been a minotaur robot as well). I think Volibear was rewritten to be a god like Ornn since they're siblings. And Alistar kinda needs an update to root him somewhere in the new lore. So probably not. There are a few champions stuck in a sort of 'lore limbo' right now.
Apparently, Ursine aren't polar bears....but feral human tribe that are were-bears.
