Why doesn't the magic Sylas take from the petricite just... get reabsorbed back into it?
Does petricite "taint" the magic and mage it non-absorbable?
Does it give it like a.. different signature? immune to magic absorption?

Because Sylas is pretty much human petricite himself at least that's how his magic functions based on his triple kill (UAV unlocked) from the story.
Enemy Magic > Into Petricite > Into Sylas > released into Enemy Mages face
Obviously I don't know what exactly Riots's thinking is, but I view petricite as some kind of battery. Generally, it is only able to absorb energy (magic), but if the right conditions are met, it can also release that energy back out. As one of the few people who actually knows the secrets of petricite and how it works, Sylas understands what he needs to do in order to utilize this 'battery' function better than virtually anyone else in Demacia. If I had to guess, I would say that the final pice that allowed Sylas to free himself was his petricite bonds reaching maximum capacity, which is why he needed Lux's powerful magic to come into contact with the chains.
It doesn't just reabsorb the magic back, because then there would be no champion that uses the power within the petricite.
Well consider that Gallio is also made of petricide and he also needs to absorb magic in order to awaken.
