If it is so powerful that Aurelion Sol is like an ant in comparison, why does this supreme primordial force interest itself in meager human activities?
What does it have to gain from it? Does it directly benefit from people adhering to its laws of "motion"? Why does it care about Runeterra at all?
Why do most billionaires like Jeff Bezos, Oprah Winfrey or Bill Gates engage in ridiculous levels of philanthropy, whereas millionaires chase cheap thrills or social status to stroke their own ego. At a certain point power/money becomes a means to an end, it becomes so abundant that amassing more is meaningless. You become so well off that the only way to feel better is to help others and take the focus off of yourself because their is no where else to go. Life opens up to you and you see all the dead ends, once thought to be glitzy and life-affirming now proven fruitless illusions of happiness.
If I were an entity, that was so perfect in every way, so effortlessly interwoven into the laws of the universe as Naga is, then I wouldn't look down on "lesser" beings and pity them, but see grace in their failings and try to help them along their way.

To be honest, it may not even be corcened.
We were told that Nagakabouros is a central part of reality itself and that Illaoi religions only picks a little bit of it and they cant compreend their God's true will, so they may only be using it's power and serving an interpretation of a higher power that may not be even aware of them. Nagakbouros might not even be sentient, but instead a force like gravity.

Why does any deity care about anything? Maybe Nagakabouros is bored and she simply entertains herself by testing mortals, or maybe she's narcissistic and created a cult around herself because she wants to be praised.
Its a god of Life, all living things matter. Whether its Gods Need Prayer Badly or just a "desire" (as improper that word is to describe a god's dominion), Runeterra might not be the only care but the Bearded Mother has reason to care for any life however small.
Same how Kindred despises the undead despite being a pair of entities that represent and administer death.
I think one of the big differences between Nagakaborous and Aurelion Sol is the effective range/ scope of their power. Nagakaborous can affect many things at once, sort of existing everywhere at the same time. In that sense, it wouldn’t matter if she helped out humans, she’s literally everywhere and isn’t losing any time because she can help them out in parallel to whatever else she does.
This is just my interpretation. There’s also a good chance that she doesn’t even consciously help, she just let’s humans channel her power (if they can/ if they are worthy).
If it really is inspired by Lovecraft, she/he may find “humans” interesting, Nyarlathotep is a lovecraft god who adored humanity of all the alien races he found.
I think Naga is pettier than Illaoi thinks. She claims that her goddess doesn't demand tribute since tribute is for weak gods, yet Nagakaboros sent Nautilus to destroy an entire ship because of one coin she doesn't even need. Maybe she destroys undead not because they're evil and stuff but because they don't play by her rules and that pisses her off.

Illaoi's religion is based around their observations of its actions and what they think pleases it. Because they take observations of (a very small part of) Nagakabouros, they may have developed a philosophy that happens to go along with Nagakabouros, but that doesn't actually mean it has impact upon it.
Rick and Morty (200 IQ btw) uses this concept pretty well with their "Get Schwifty" episode where the town develops a religion around a giant head in the sky. It's a goofy version of Lovecraftian cosmic old gods that develop cults around them.
