So what is the demon that Swain is "wielding"

As far as we know, Swain's demon takes place as his left arm replacement, which is the main source of his demonic power. But who or what really is this demon exactly. The furthest information we have of it is that it must be some sort of raven-like entity, judging by swain's hand, and the fact that this demon itself makes demonic ravens, which scout information as if it was this demon's extra eyes. This is also the only demon we know of so far that can take fragments of souls, other demons we know of such as nocturne or evelynn do not involve themselves with such. Is the demon the flock of raven's around swain, his left hand, or is it elsewhere in the spirit realm, but following swain.

Beatrice is a demon, just like Tahm and Evelynn. She also doesn't consume soul fragments in the lore, I believe that's purely a gameplay element (as not all gameplay elements directly translate into lore).

Instead of feeding on lust or greed like her counterparts, Beatrice feeds on secrets and the release of people telling their secrets in their final moments. To feed better, she's entered into some kind of pact with Swain, who will provide her with sustenance in exchange for her providing him a surrogate hand.

that's just popular fanon. still would not be surprising if the demon was named Beatrice

I'd Ike to point out that Swain didn't enter a pact with Beatrice and they do not have a mutually beneficial relationship. He either tricked or forced the demon to be an instrument of his will. Small detail that makes him more badass than you think.
