Watchers were defeated by their magic, indirectly. They just give too much power to mortals and eventually it turned back against them. But with iceborns now being low numbered, since most of them are dead, how can they be stopped now? Lissandra is also likely stronger than ever.

Last I checked Anivia is with the Avarosians and Volibear is with the winter claw, so 2 out of 4 demigods (2 out of 3 if we don't count the seal sister)
Also isn't Braum like the legendary cliche Marry sue hero of freljordian legends?
I dont think we can really anwser this without going way out on a limb until we learn who/what the watchers really are. Like are they more powerful than the Shurima Ascended? Targonian Aspects? or the Celestials like Bard and Soraka? are they more powerful than Aurelian Sol? are they more powerful than Nagakborous? I would assume the Freljordian Demigods would be slightly less powerful than the Bearded Lady but ultimately they seem like some of if not the most powerful figures in the league universe, (Im still going to say Sols powerlevels are greatly over exaggerated)
If everything fails, they actually could just wait it out.
Given according to Lissandra, the Watcher's motive is to "reborn the world in ice". It is clearly enough to garner Bard's attention and action against it, for it is a noticeable threat to the cosmic balance Bard is in the position of governing.
So they could just try and survive as best they can, and Bard would arrive eventually and 1shot the entire Watchers' crew. And instantly make a constellation too, for future book-keeping.
