You overestimate his size a little bit.

The Ascended have always been huge. Nasus's usual size is NOT the right size of the Ascended, in the story Bloodline, Chapter VII, "Nasus let the fury of the sands fill him, his limbs surging with power and his body swelling as the desert’s wrath manifested within his dark flesh. His form loomed and grew, towering and monstrous like the first Ascended were said to be."

The first Ascended where normally the size of Nasus when he is in his Ult form. So yah, a regular Ascended is suppose to be fucking huge. My guess is later Ascended gradually became smaller due to the ritual either not being done with the same output as before, or the Sun itself is loosing its output.

Aurelion has stated several times his stars are in desperate need on maintenance, even specifically stating Runaterra's sun needs a new core. Seeing how the Ascended draw their power from it, it makes sense that its gradually declining in strength

I don't think he actually "grows" per say. It's more the subjective experience of the people he terrorizes on the battlefield. It's meant to reflect their fear and awe of him. That and it makes it easier in gameplay to communicate in a split second oh this guy is bigger now so he's also stronger. Same with Nasus ult, Renekton ult and Lulu ult
