Aren't bones supposed to be dry like "dry as a bone"?
Is this supposed to be funny/ironic?
Something like "Their blood will wet my blade" would be cooler and make more sense.

Whet: sharpen the blade of (a tool or weapon).
It's a reference to a whetstone, a sharpening instrument for blades.

Even if it was wet and "not whet" It would make sense.
Fresh bone is not dry. Extremity bones surround bone marrow which creates blood. So, bone inside of a living person has a lot of blood.
Bones wetting his blade is a lot more brutal and cooler than blood itself wetting his blade because it means his blade can cut through bones.
