I think they might have mentioned Ornn as well: "the reclusive gunsmith rumored to be a fallen deity" sounds a lot like Ornn.
I'm just gonna hazard a guess with what lines I could find that might match, but;
BLITZCRANK - "...the mechanical men built by human hands, long gone rogue." - EDIT: Also could be referring to Jhin, as mentioned by NotaRobot1006
CASSIOPEIA - "...and a saloon girl with the body of a cobra. Her milky eyes were hidden behind a veil, lest a paying customer turn to granite before they ever sat down to drink."
HECARIM - "He remembered tangling with a particularly nasty specimen near Chuparosa that moved with the speed of a desert storm, kicking up whirlwinds as it went. It was too fast to hit with a bullet..." - probably referring to either Hecarim or Yasuo, but since Yasuo is still invariably human, I'm going to guess it means Hecarim.

KAYLE - I would put a quote here, but there's plenty of talk of angels in general, so I'm not sure if there would be any that stand out.
KOG'MAW - N/A

TAHM KENCH - I would put a quote, but I'd rather not drop a whole paragraph in. I imagine the Outsider from the day Lucian met Senna could be the reference to Tahm Kench, due to the mention of a suit-wearing gambler who could make someone rich, or take away their greatest possession.
TWISTED FATE - N/A
VIKTOR - "...and the reclusive gunsmith rumored to be a fallen deity..." - I could be wrong, but that does sound like Viktor - a reclusive, deified engineer.
YASUO - N/A
I could of course be wrong on some, and may have missed over quotes that possibly reference the ones I didn't find (Yasuo, TF, Skarner, Kog'Maw), but, these are the rough guesses.
