Skin boosts don't override a skin. They just unlock a new one for the length of the game. You can still choose another skin while in champion select.

Now, as a player, I need to make something clear, you aren't purchasing the skin itself, you're purchasing the right to use it. And "it" is defined by whatever currently occupies that slot.
