Does riot do anything about this? I have seen people using scripts in a few games and I'm wondering if its even worth reporting them, or if it would be better to just post a video of it happening

posting a video here will have it deleted for name shaming. you can post it on reddit though.
and riot does do something about it. 3rd party software use punishments happens in waves and is a permaban upon found guilty.
If you have a video of someone scripting, send it to Riot via a SUPPORT TICKET as that's what they prefer you to do.
And, to add on to what KEL143 said, only those using illegal software (3rd party programs Riot doesn't allow) will eventually be banned in a ban wave when it happens. Keep in mind the system is not 100% accurate and rarely bans someone who is innocent.
Also keep in mind, if the account is bought it can be banned even if you're not using an illegal 3rd party program as sometimes those accounts were leveled via 3rd party programs.
To be honest, I don't think I've seen anyone that I know 100% was legitimately scripting in my thousands of games of leagues. Maybe your opponent was just really good/smurfing? I've been accused of scripting a few times on my smurf account ;-;
