What do trolls find so appealing about spiting others?

I don't get it, guy in champ select hears I'm in my promo and announces that he will be trolling, team doesn't dodge to help me or anything.. Next game, requeue OH LOOK THE SAME GUY. He recognizes my name and trolls me AGAIN, nobody dodges, they would rather lose 20 lp than 3.

I've found it's usually reinforced by an audience. Not necessarily the team you're with, but probably a roommate or something looking over his/her shoulder.

Wait a few minutes before jumping back into queue. It'll be highly unlikely you'll see the guy again.

In game design there is a select group of people that only feel satisfied if they do everything in their power to get inside your head. These people exist in all forms of things, they have a specific name in magic the gathering for example: Griefers. This group does not necessarily equate to a bad things in some forms, for instance "countering" can be a form of "griefing", but in insane amounts can be considered bad for games. The trick is to not let them get to you, cause then they have "won" because you fell into their trap and mindgames. No matter who or where you are these people exist, pity them, but do not feed them. Like now, this thread fuels them by giving them what they want, and what they want is your emotional pain.

You're telling me. I just lost cuz some dude wanted to play Ashe support (has never played Ashe). He then runs top, dies to the enemy (not sure what he was doing top). Then comes bot lane, dies 4 more times before afking.

The reason that they do it is because Riot simply will not punish them. They will forever defend them as "they just had a bad game" or "they are playing for fun". So to answer your question, they find it appealing that they can do it without being punished. Instead, they get their teammates punished for bitching about their trolling.

If you're asking for the basic motivations of a "troll..." Self-centered humor. Many trolls simply find it funny when others are bothered. Some might say that people having fun in their own harmless ways are trolls (ex: playing Shaco toplane) because their methods are unconventional (and are believed to be ineffective). "Humor" trolls are the ones you're having issues with. If you produce any sort of reaction, they get exactly what they want. Threatening them or complaining about them gives them their jollies. Just ignore them and play as you would normally, but report them after the game is over (without saying ever directly mentioning or speaking to them). They already know they'll eventually be punished; deny them the reward that they're taking risks to acquire. "Harmless" trolls are those guys you see playing Urgot. Yes, they're risking the outcome of your game by doing something that's less likely to work than, say, Nidalee, but they just might know what they're doing + they're entitled to playing how they want as long as they aren't doing it just to annoy others.

While I'm by no means defending the troll, why if it happens once would you queue up right after your last game with a troll? Just if it happens to me I would wait maybe 5-10mins and then queue back up. Queuing up right after your last game usually makes it so you are back with people you just played with especially when they queue up the same time as you!
