They'll nerf champions with fundamentally broken abilities to the ground rather than change 'em (read: Akali's true stealth), yet they removed unique aspects from Irelia's kit when they weren't the issue...

In my opinion, these "unique effects" Irelia had were just tagged on. They were not necessary for her playstyle, nor did they define her thematically.
Her ultimate already slows, deals damage, marks for her Q, and knocks enemies away. It didn't need to unarm the enemy on top of it. They can still add other champions in the future with the ability to unarm the enemy team at large, but then at least it should be their thematic.
Her additional damage against shields is another such point. She already gets on hit damage against enemies and additional attack speed. The extra damage against shields is not really why you pick Irelia, it doesn't define her in the slightest. Heck, I could bet there are quite some Irelia players out there who didn't even know that this was a thing.
Irelias kit was overloaded to begin with. Getting rid of some of these effects might not be the worst idea. And what would you have preferred: that they remove the bonus AS from her passive or the bonus damage against shields?
