There is a period between each auto attack before you can use another, as indicated by your attack speed. There are very few exceptions to this (ie. skills that reset your aa interval).
When kiting, use the period to get as much space between you and your enemy before your next auto attack (moving in a direction away from the enemy). Some people will incorporate the use of slows to help maintain a good distance. Here's an example of a kite:
I am playing Caitlyn, and the enemy jungler (let's say Nocturne) comes to gank me from the direction of the enemy turret. It's around level 3-4, so he doesn't have his ult to immediately jump to me. As he closes in on me, I hit him with an auto attack (and as soon as I see the dmg get off), I immediately click away from him and towards my turret to move away. After my auto attack is back up, I hit him with another, then go back to clicking away from him. Using this method, by the time Nocturne has caught up to me (if he does at all) he's taken 5 auto attacks and now has less health that I do, putting me in a position to turn around and beat him in a fight. If I still am not in a position to win a fight against him, at least he no longer has the health to turret dive me successfully.
I'd recommend practicing this technique in normal games before playing Ranked. Ashe's q, which can be turned on to give her auto attacks a slow, and her w which applies the slow from her q, make her very good at kiting.
