Basically you are trying to run away, but occasionally using auto attack to weaken your enemy, wither to disengage or to plan a full on attack.

Just walk away from your enemy and give a few auto attack every couple steps.

There is a period between each auto attack before you can use another, as indicated by your attack speed. There are very few exceptions to this (ie. skills that reset your aa interval).

When kiting, use the period to get as much space between you and your enemy before your next auto attack (moving in a direction away from the enemy). Some people will incorporate the use of slows to help maintain a good distance. Here's an example of a kite:

I am playing Caitlyn, and the enemy jungler (let's say Nocturne) comes to gank me from the direction of the enemy turret. It's around level 3-4, so he doesn't have his ult to immediately jump to me. As he closes in on me, I hit him with an auto attack (and as soon as I see the dmg get off), I immediately click away from him and towards my turret to move away. After my auto attack is back up, I hit him with another, then go back to clicking away from him. Using this method, by the time Nocturne has caught up to me (if he does at all) he's taken 5 auto attacks and now has less health that I do, putting me in a position to turn around and beat him in a fight. If I still am not in a position to win a fight against him, at least he no longer has the health to turret dive me successfully.

I'd recommend practicing this technique in normal games before playing Ranked. Ashe's q, which can be turned on to give her auto attacks a slow, and her w which applies the slow from her q, make her very good at kiting.

Hope this helps.

The super basic idea is not to stand still while attacking.

Every little bit you move gets distacen between you and the enemy, helps you avoid skill shots, forces your opponent to react (by chasing you or running away or moving to aim skill shots through other things)

In lane you can kite around the minion waves so people can't hit you with skill shots and take minion damage trying to get to you.

In a team fight it's vital. If you just stand still autoattacking as an ADC, you get dead. Very simple.

Just constantly move and think about your positioning, trying to keep the enemy just in range of your attacks, but no closer. If an enemy is close enough to attack you, get out.

There is a command called "attack move" by default I believe it is the "a" key on the keyboard. You click "a" and watch your characters animations there is a brief second that your character can move in between auto attacks (AA) right after the attack animation goes through and right before the next attack animation starts. You attack, click a and left click then right click away from you. This will cause your character to attack the closest target to you w/o you having to actually right click on a target. and then you move backwards using the normal right click to move function. This is called "orb walking" and is the best way to effectively kite.

I would suggest googling or youtubing orb walking :)
