Multiple cheeses are better than just one. Honestly, any cheese is pretty good so long as it has a distinct, somewhat strong flavour like cheddar, colby-jack, swiss, heck I've used munster and gouda before.

I'm a fan of Pepperjack myself. It adds a kick that's unlike anything you typically find in a grilled cheese sandwhich.
