Which is goinna have more long-term enjoyable content? I know that's a very subjective question, so I'm really just asking for your opinions.
Working on leveling in FFXIV, but I keep burning out. People tell me the end game is so much better. Is it actually fun at end game?
As far as WoW, I played for years, but then they made the classes super simplistic and easy, and I got bored. Is it any better now?
both are bad with fetch quests and kill xgoblin 6 times for 32 items blah blah blah
I think it is personal preference, I prefer ff14 but can understand the hate of the grind to get to relevant content.
The end game content is ff14 is realllllly good though can attest to that.

Neither one has long term replayability unless you enjoy the most mundane aspects of mmo's. All content is streamlined to be plowed through in a short period of time while you wait for the next content patch to deliver the next carrot on a stick. FF does a much better job with story and delivering a cinematic experience and wows is more polished and varied.
I definitely prefer FF14 to WoW, but to be fair, I've never gotten to endgame content in FF14 while it was relevant.
wow needs to redo there whole structure imo ff14 is more up to date plus the story and endgame is better
WoW is really really really really really really boring. 13 years of the same gameplay while simultaneously removing most of the factors that made the different classes unique and fun.
I like the fact that they at least tried to make it so Druids would actually be switching forms rather than just staying in whatever form their specced for but implemented it so poorly that it just became a passive buff you picked.
There is this really great MMO called "Real Life" that is totally worth your time investment.
Blizzard is sorta deluded so they'll keep WoW going for a long time, FFXIV will probably get dropped when XVI turns out to be another bloody subscription based MMO.
Just get like 10 years of Runescape Membership

If this was 13 years ago, I would have said World of Warcraft.
Take my advice and never play it, it took me 7 uninstalls to finally quit playing it when I eventually moved onto this.
