Given your requirement of "visually appealing", I can think of a few examples:
You can watch Shokugeki no Souma (literal meaning: Souma of the Food Fight. Localised: Food Wars!: Shokugeki no Soma). You watch it for the tiddys, and stay for the delicious magic and actual good plot. It's about competitive cooking, you can think of it like TV shows in veins of MasterChef, but with far more organic drama elements.

Or you want something completely vanilla, I highly recommend Mushishi (literal meaning: Bug master (?); there is no literal translation of the term, especially when the "mushi"/"bug" in the series is actually referring to supernatural creatures more akin to that of youkai). The series is about this wandering doctor who goes around doing some things related to these "mushi" creatures; it's episodic for the most part, and each episode is mostly an independent story of its own.

Speaking of "vanilla", please also watch Aria (NOT Hidan no Aria), just Aria. It's a sort of utopian slice of life story that is very slow paced, so if you're into that kinda stuff (my brother is allergic to it for some reason. He's more "stuff happens" kind of person); it's super good for treating depression and anxiety, though. It's about the people living on the fictional 24th century terraformed Mars, and the main cast mostly consist of the gondola rowing/'water guide' for the city/country of "Neo-Venezia" on this 24th century Mars. A visually appealing story both to the eyes and your heart.

And speaking of "visually appealing", one can not go without mentioning Violet Evergarden, arguably THE most visually intensive serial anime so far. It's more of a "talking" story, though, where it's about post-war recovery. Though based KyoAni never cease to impress with over-budgeted visuals vistas with real magic.

Speaking of magic, there's the Mahoutsukai no Yome (literal meaning: Magus/Magician's Bride. Localised The Ancient Magus' Bride). The seamless transition between modernity and magic, very alluring indeed. It's about the female protagonist being literally sold to the male protagonist (the "Magus" as mentioned by the title) as a slave, in the modern era, because some people still in the past with that kinda stuff. Then well, characters get to learn to know and respect each other, and stuff. It's super visually impressive, with a good story in a sort of surreal setting.

Speaking of surreal, how can I not mention the Houseki no Kuni (literal meaning: Country of Jewels. Localised: Land of the Lustrous), the most visually impressive CGI anime to date that certainly wow'ed more than enough people with its impressive visuals, combined with the interesting setting and plot of the story that revolves around a world where everyone is an anthropomorphic humanoid gemstone. It takes you on a trip, a very good trip.

Speaking of trips, coming next right up is of course, Kino no Tabi (Kino's Journey). It's about a girl and her talking motorcycle, Hermes, going on adventures and traveling from countries to countries; though it's called "countries" though some viewers have wondered what kind of traveling Kino is actually doing because it would seem she travels across time and space rather than just the physical distance. Much like the suggestion above, this is also more of a surreal experience, but don't fret, because the journey is still worth the shot!
Kino no Tabi also has 2 adaptations so far. WATCH BOTH. Here are the links to the 2003 adaptation and the 2017 adaptation. Because they are adapted from different chapters/stories of the light novels, and the few ones that do overlap, the newer one is more faithful, but the old one is more insightful in some areas.
You may also notice the slightly different character design of Kino, that's mostly because the depiction/illustration of Kino has changed over the years in the light novel. The appearance of Kino in both adaptations are based on their respective year of the character's illustration history.

Speaking of the shot? What's that? Oh it's Sora no Woto (Sound of the Sky). The anime equivalent of All Quiet on the Western Front in a way, the story is set in an alternate WW1 setting (though there is a catch implied in the story) centering around a group of border patrols that's actually a little bit away from the frontline but is nevertheless closely linked to it. It's still a slice of life story at its core, but one can not avoid the serious undertone in the background.

Did I just mention serious undertone? Well, you can't avoid Haibane Renmei (Charcoal Feather Federation). Another surrealist entry to this list, the story describes a world in which people are "born" into it seemingly already has a child or sometimes an adult, with only 1 memory prior to their waking, and everyone in this world has grey wings and a halo.

Seeing this is the direction we're taking now, let's not stop with just that! I will also introduce you to Barakamon (there is no literal translation in standard Japanese, but it can be roughly translated to "An Easygoing Person" in a particular Japanese dialect). Fitting for its name, it indeed takes place in the countryside. It's about a modern-day esteemed and proud Japanese calligrapher losing his shit at a convention and is punished by the latter by "exiling" him into the countryside, and subsequently he learned to see things he otherwise wouldn't prior to going there.
