How does AA/point click range work according to the map?

Now I know this is a weird question, but the more I play Irelia and her AA, I can't help but wonder how even after chasing 1-2 seconds I can't AA someone, and yet somehow magically there's this "moment" after chasing them that I can AA my enemy. Irelia and GP both have the same movement speed, so even if I was to kite, technically gp should be able to run away after 1-2 of my AA because I have a melee AA range plus I already spent my time on the short AA animation which further delays me chasing him. Somehow it doesn't work like that. Same goes for leblanc's Q. I chase someone some decent time and there's this suddent 'point' where I can suddenly magically land my Q although I've been spamming Q on my opponent for ages trying to land it. I know it sounds kinda dumb but I just wanna figure it out so hopefully I know when I can chase compared to when I should not.

If it's on flat terrain it means they adjusted their heading and lost ground due to the direction change, if it's on rough terrain (like the riversides) then it's due to the Z axis having an effect.

This second one can be seen when placing a ward with indicators on while trying to recall. Sometimes the indicator will show you're in range, but placing the ward will cause the champ to move to get in range. This is the indicator being inaccurate due to the terrain height differences.
