Kassadin has been my go to mid laner in the last few months. if you can handle his weak early game, his late game is pretty scary. He also has the benefit of taking 15% less magic damage, completely useless against AD lanes like Talon, or Zed, but makes surviving guys like Brand, Veigar, Annie, or Ahri a little easier.

Brand High damages, long range, almost your entire kit can be AoE making your teamfighting absolutely insane. He's also extremely versatile and can be played support with making use of his W-Q to stun, and his R is used to maximum benefit since it can bounce between two targets rather than just hitting one. This comes at the trade off of medium-high mana costs, however thats easily remedied. Apparently he's always banned now though.

Annie - As long as she has her stun after 4 casts, she'll NEVER not be good, other than that, her damage is absurd being able to 100-0 almost anybody. Farming is extremely easy since her Q refunds its spell cost on kill.

Akali -- A god at low ELO because nobody knows how to pin her down, above that, shes good against Yasuo for one. She can pop his shield with her Q, and after the duration wears off, throw another Q and begin her burst. Shes extremely hard to peal.

Diana - Rare in the mid lane now, but she was my season 4 pick. She's like Akali in terms of stickiness, and burst, but she also has the added benefit of being naturally tanky. She needs to land her Q to really be a threat though.

Anivia - Hard initially to play. The gist is to just R in the middle of a team fight and E their squishiest target to almost instantly delete them.

Finally, I don't know if this is still a thing, Chogath- Tanky. As. Fuck. His burst is absolutely insane, and is extremely good at staying in lane thanks to his passive. His Q might be tough to get the hang of at first, but once you get good at landing it, combo it with his W and cripple any squishy to a low enough point where your R can execute them. His burst is on level with most assassin heroes.

Some very low mechanicly difficult champions are Annie Ezreal (AP, though you'll have to land a lot of skillshots)Fizz (he's got good damage and a good escapes, which means you can mess up and not be punished as much. Wall hopping with E is difficult though - I can't do it reliable)Vladimir (more of a top laner but he can do well mid too. No skillshots)Ziggs (spam dat Q) and honestly Zed (just don't kill yourself, and you have a decent escape with shadow, as well as massive AoE dmg which means sometimes you can turn around 2v1's or max life vs low life.)

And do not try TwistedFate

Annie you can farm with Q and get mana back, she's very straightforward and people have no trouble playing off of her ult. She probably should be the first mage new players are introduced to when picking up the game rather than Ryze really since Ryze is less similar to other mages.

Then again I picked up Ahri as my first mid laner before I hit level 30 and have been playing her ever since so take your playstyle into account as well.

For Mages, lux. For assassins, talon.

TwistedFate If you are serious about learning mid. If you just want an easy mid laner to play, id say Annie

Xerath for poke, veigar for burst

Oh, and Cassiopeia for bullying

But i reccomend learning with orianna or karthus, as they stay relevant through the entire game. Tough to play, but WELL worth the effort

I prefer Lissandra, but Annie and Lux are fine.

Annie is a very good choice. But whatever you do, do not use Yasuo. You'll catch too many bad habits.

For me, Veigar was an easy enough pick to get into. He's incredibly easy to use, and depending on the matchup can be extremely annoying to lane against.

Xerath is a very safe mid laner that is relatively easy to understand. Mastering his skillshots will take time, but he's a very rewarding champion to master. His super long range will make the learning process a lot more bearable, since the opponent rarely has the opportunity to trade back. Also, being able to land skillshots in general is a good talent to pick up.
