A lot of her abilities scale off of ap, but would it work and how?

Riot killed that build on purpose.
You could do it, but a lot of her damage is tied into E and autoattacking 4 times before using W. If you can reliably get 4 autoattacks on someone and then jump on them you should do fine.
It's strong in lane and small fights, but she is really hard to use in teamfights. Her damage potential is massive, especially post 6, but it is tied to landing 4 AAs in the E, followed by an agressive jump. She also drops a bit lategame in terms of damage as her E deals physical, but W and R magical damage, so you can't get good pen.
